tofu pate
wonderful spread for bread, crackers, wheat tortillas, rice cakes, topping for baked potatoes, rice, cooked grains
ingredients:
1 12 oz. package of firm tofu
1/4 cup nonfat yogurt
1/4 cup chopped onion
3-4 cloves garlic
1 celery stalk, chopped
1/4 cup cucumber, seeded and chopped
1 small dill pickle, chopped
small handful parsley, stems removed
small handful cilantro, stems removed
1 tsp. mustard seed
1-2 tsp. prepared mustard (Dijon, stoneground)
1/8-1/4 tsp. turmeric
1/8 tsp. salt
2 tbsp. nutritional yeast
freshly ground pepper to taste
method:
1. Drain tofu and cut into four slabs of equal thickness. Wrap slabs of tofu in clean kitchen towel and place under a cutting board or similar weight to squeeze excess water from tofu.
2. When tofu has been drained, place in large bowl and mash well with fork, potato masher or pastry cutter.
3. Add all remaining ingredients to the bowl and mix well.
variations:
1. Experiment with different herb and spice combinations: cilantro, cumin and cayenne; basil, thyme and chopped tomatoes.
2. Add finely chopped vegetables: carrots, green pepper, olives, artichoke hearts, etc.
