spaghetti with tuna sauce
serves 2

• ingredients:
4 cloves garlic, minced
4-6 scallions, chopped
2 tbsp. olive oil
1 small jar marinated artichoke hearts, drained and chopped
1 small zucchini, sliced
2 tbsp. capers
1 6.5 oz. can water-pack tuna
1 lemon, juice and zest
fresh chopped herbs: parsley, basil, oregano
parmesan cheese
pasta: fresh or dried

• method:
1. Bring a pot of water to boil.
2. Over medium heat, warm olive oil in large skillet and add garlic, sauteing until soft. Then add zucchini, capers, artichoke hearts and white parts of scallions and gently stir until onions are translucent and zucchini tender.
3. Add pasta to boiling water and cook until al dente.
4. Several minutes before pasta is done add tuna, green scallion tops, lemon juice and zest to sauce, gently stirring and heating through.
5. Drain and rinse pasta. Top with tuna sauce and generous sprinkle of parmesan and fresh herbs. Toss well to combine.
