bean salad
serves 2-4

• ingredients:
2 cups cooked beans (navy, kidney, pinto, chickpeas, etc.)
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
1/2 onion, chopped
4-5 cloves garlic, peeled and minced
2 stalks celery, chopped
drained marinated artichoke hearts, chopped
chopped parsley and spinach

• method:
1. Combine all ingredients in bowl and mix well. Cover with your favorite vinaigrette and toss well. Serve over bed of spinach with sliced tomatoes.
