tofu arame stir fry with peanut sauce

• ingredients:
» peanut sauce:
4 tbsp. peanut butter OR almond butter
2 tbsp. brown sugar, barley malt, OR rice syrup
1 tbsp. miso
1 tbsp. rice wine vinegar
4 tbsp. water

» stir fry:
2 tbsp. peanut or sesame oil
8 cloves garlic, peeled and minced
2 inch piece ginger, peeled and grated OR several pieces pickled ginger, chopped
1 lb. firm tofu, drained, pressed, cubed
3 carrots, chopped
1 large daikon radish, chopped
large handful of mild greens (mustard, kale, beet, radish)
2 tbsp. sesame seeds
1 oz. of dried arame, soaked for 30 minutes, drained
tamari
cilantro, chopped

• method:
1. Combine all ingredients for peanut sauce well, adjust seasonings to taste.
2. In a wok or heavy, deep skillet heat oil then add garlic and ginger, stir frying 2-3 minutes. Then add cubed tofu and carrots, and stir fry until carrots begin to soften. Add daikon and arame and stir fry 2-3 minutes. Add water to help steam vegetables if wok becomes to dry.
3. When the carrots seem crisp tender, add chopped greens, sesame seeds, and peanut sauce, stirring well to mix and coat. Cook 1-2 more minutes making sure greens wilt slightly and sauce heats up. Garnish generously with chopped cilantro.
