Thai garden rolls
makes 20 rolls
ingredients:
20 rice paper wrappers 6" diameter (see note below)
small package of rice noodles (see note below) OR 1/2 cup cooked brown rice
2 eggs, hardboiled and finely chopped (optional)
1/4 block firm tofu, pressed and cut into small cubes
1/2 cup mushrooms, finely chopped
1/4 cup green or red cabbage, finely shredded
1/2 cup carrot, shredded
1/4 cup daikon radish, shredded
40 shrimp, peeled, deveined and cooked (optional)
fresh mint, chopped
fresh cilantro, chopped
method:
1. Follow package directions to cook rice noodles. If no directions given, place rice noodles in boiling water for 2-3 minutes, remove from heat for 1-2 minutes and taste for doneness. Drain and rinse.
2. Clear an adequate workspace, ideally near a sink or basin of water. Assemble garden roll contents close at hand. Place the rice paper sheets in water for 30 seconds, remove from water, allow to drip and place on clean work counter. The wrappers may still appear stiff but will continue to soften.
3. When the wrappers reach a soft, pliable consistency, begin to assemble contents somewhat off center of the rice paper. Be careful not to fill too full. Filling ingredients can be tossed together or added separately to vary the contents among rolls.
4. Fold the opposite edges of the paper in towards the center, overlapping the filling. Then roll, beginning with the edge closest to the filling. Roll tightly and place the finished roll, seamside down on a plate. If the rice paper wrappings begin to tear, you can try using less filling or two layers of wrappers.
5. Continue making rolls until filling is used completely. These rolls can be served immediately at room temperature, or cover rolls with airtight plastic and chill. Serve with peanut dipping sauce or teriyaki sauce.
note:
1. Rice paper wrappers are found at Oriental food stores and some health food stores. The smaller sized wrappers are easier to handle. Inspect the package closely before purchasing and if the wrappers appear broken look for an undamaged package.
2. Rice noodles are made from rice and water and are found in Oriental stores and some health food stores.
