baked fish in coconut sauce

• ingredients:
1/2 cup onions, minced
3 cloves garlic, minced
1 tbsp. grated fresh ginger root
2 pounds fish fillets
1 tsp. dried hot chili peppers or 1/8 tsp. red chili paste (or to taste)
1/3 cup coconut milk
1/8 cup tamarind (available in Asian food stores)
2 tbsp. cilantro, chopped

• method:
1. Combine the onions, garlic, and fresh ginger and grind to a fine paste with mortar and pestle. Rub the fillets with half the onions-garlic-ginger paste. Place the fillets in an shallow, greased baking dish.
2. Cover and chill for 15 minutes.
3. Combine the remaining spice mixture with the chili peppers, coconut milk, and tamarind. Spread sauce over the chilled fish and bake uncovered at 400° F for 20 minutes or until fish flakes easily.
4. Garnish with cilantro prior to serving.
