teff oat bran muffins
Makes 12 muffins.
ingredients:
1/2 cup teff
1/4 cup boiling water
2 cups non-wheat flour
1/2 cup oat bran
1 1/2 teaspoons baking soda
1/2 cup honey (or equivalent)
2 tablespoons oil
1 cup dairy substitute
1 egg, slightly beaten
1 tablespoon orange rind
method:
1. Preheat oven to 375° F.
2. Oil muffin tin.
3. In a mixing bowl, pour boiling water over teff. Stir to moisten all the teff. Set aside.
4. In another mixing bowl mix flour, oat bran, and baking soda.
5. When the teff mixture is cool, stir in sweetener, oil, dairy substitute, egg, and grated orange rind. Add to dry ingredients.
6. Mix with a few quick strokes, spoon into prepared muffin tin and immediately place into preheated oven.
7. Bake for 20 minutes.
8. Cool for 10 minutes before removing from tin.
