quinoa and tomato soup
Serves 6

• ingredients:
1 tablespoon unrefined oil
1 cup tomato, chopped
1 teaspoon fresh cilantro (coriander), minced
6 cups stock (chicken, fish or vegetable)
1 clove garlic, pressed
1/2 cup quinoa
1 onion, diced
scallion for garnish
1/2 green pepper, chopped
2 stalks celery, chopped
1/4 cup cheese, grated

• method:
1. Heat a 2-quart soup pot.
2. Add oil and saute cilantro, garlic, onion, pepper, celery, and then tomato.
3. Add salt and pepper.
4. Add stock and bring to a boil.
5. Add quinoa and return to boil.
6. Cover. Reduce heat and simmer for 45 minutes.
7. Garnish each bowl with scallion and cheese. Serve hot.
