The function of fats
Energy Fats are the richest source of energy used by the body. They are relatively light weight and ideal for storing calories for future requirements.
Protection Fat surrounding the organs makes an excellent protective pad. It also fills in spaces that would tend to allow the organs to slide downward due to gravity.
Maintain body temperature Fat has excellent insulating properties and helps maintain proper body temperature for metabolic activities.
Transport nutrients Dietary fats provide the stimuli for bile salt secretion from the gall bladder and are crucial for the absorption of fat soluble vitamins.
Regulate stomach emptying Fat in the stomach is responsible for stimulating the enterogastric reflex which, in turn, keeps food in the stomach, thus allowing greater digestive action.
Palatability & satiety Fat in foods tastes good and, without fats, food would be much less satisfying. In addition, since it keeps food in the stomach longer, fat allows satiety signals to reach the brain.
