tahini/peanut butter cookies
ingredients:
2 cups peanut butter or tahini (cold nut butters work best)
2 cups honey
1 cup oil
6 cups whole wheat pastry flour or substitute oat, rice flours
1/2 tbsp. salt
Note: The amount of flour added may need adjusting due to the consistency of the nut butter used.
method:
1. In large mixing bowl, mix together the nut butter, honey, and oil.
2. Add flour and salt to the nut butter mixture. Mix gently, but well.
3. Lightly oil cookie sheets. Drop rounded spoonfuls of dough onto sheet and flatten twice with fork tines.
4. Bake in a 325° F oven for 12-13 minutes or until brown on bottom (may still look raw on top-this is fine). 5. Remove from oven and let cool 30 minutes on sheet before removing or cookie may fall apart.
