definition

infant formula/soy
Note: these recipes are intended to be only occasional supplements and cannot replace breast milk or a complete milk substitute. It is important to give a baby extra water when using soy milk formula, because the protein is fairly concentrated.

» recipe #1
• ingredients:
2 1/2 cups whole soybeans

• method:
1. Rinse the soybeans and soak in 5 cups water for 8 to 10 hours. The water should be cold to prevent souring.
2. Blend one cup soybeans with 2 1/2 cups hot water at high speed, for about one minute, or until beans are finely ground. Repeat until all beans are ground.
3. Pour blend into large pan or double boiler, over medium high flame. When soy milk starts to boil, turn down heat and simmer for 20 minutes, stirring occasionally.
4. Pour soy milk through cheesecloth, twisting pulp in the cloth to remove as much milk as possible. Repeat process, pouring two cups boiling water in with remaining pulp and straining again.
