mushroom barley soup with beans
Serves 6-8
ingredients:
3/4 cup raw pearled barley
2 cups cooked navy, kidney, or cranberry beans or 3/4 cup dried beans
8 cups stock or water
1/4 cup tamari (soy sauce)
1/4 cup dry or cooking sherry or red wine
3 cloves minced garlic
2 large chopped leeks, white bulb only
1 1/2 pounds sliced mushrooms
freshly ground black pepper
1 bay leaf
1/8-1/4 tsp. curry powder
fresh parsley
method:
1. Simmer barley in stock or water, covered, for about 1 hour until tender. If using dried beans, may add barley to half-cooked beans and continue simmering until both are done, adding more water as needed.
2. Cook leeks and garlic in a little water until soft.
3. Add mushrooms and steam along with leeks and garlic until soft. Add this mixture to finished barley and beans.
4. Add tamari and sherry or wine, curry powder and a generous grinding of black pepper. Cook covered over the lowest heat for 20 minutes.
5. Add generous handful of chopped parsley and correct seasoning before serving.
