Mediterranean quinoa salad
Serves 4

• ingredients:
1 1/4 tablespoon olive oil
1 garlic clove
6 mushrooms, minced
2 1/2 cups cooked quinoa
3 scallions, minced
1/4 teaspoon sea salt
1/2 large red bell pepper, minced
romaine lettuce leaves

• method:
1. Heat 2 teaspoons of the olive oil in a medium skillet over moderate heat.
2. Add the mushrooms, scallions, red pepper, and garlic.
3. Cook, stirring occasionally until softened, 2 to 3 minutes.
4. Transfer to a serving bowl; add the cooked quinoa and toss with the remaining olive oil.
5. Season with sea salt, then place in the refrigerator until chilled.
6. To serve, line a plate with the romaine and mound the quinoa on top.
