peanut dipping sauce
served with Thai garden rolls, soba noodles, or gado gado: a fresh raw salad of spinach, cabbage, bok choy, cucumbers, carrots, mushrooms, snow peas, potatoes, tofu, egg, etc.
ingredients:
1 cup chunky peanut butter or other nut butter (see variations)
2-3 tbsp. honey or rice syrup
1 tbsp. tamari
1 tbsp. fish sauce (optional)
3 tbsp. lime juice
1/8-1/4 tsp. red pepper flakes or 1/4 tsp. red chili paste
water
1/8 cup peanuts
cilantro
method:
1. Mix first five ingredients well.
2. Thin the peanut sauce with water to the desired consistency and add chili paste or red pepper flakes to taste.
3. Adjust seasonings to taste.
3. Garnish with chopped roasted peanuts and cilantro.
variations:
1. To the basic peanut sauce substitute coconut milk for water and add tamarind paste.
2. If sensitive to peanuts, experiment with other nut and seed butters: hazelnut, almond, sesame, sunflower etc.
