vegetarian soup stock

• ingredients:
any clean raw vegetable leftovers or scrapings: carrot peels or sliced limp carrots, outer lettuce leaves, onion skins, carrot ends, celery tops, broccoli stalks, etc.
2-3 cloves garlic, minced
1 tsp. each: basil, oregano, marjoram, thyme
1 handful chopped parsley

• method:
1. In a large soup pot bring a 6-8 cups of water to simmer with added vegetables, simmer for 30 minutes.
2. Strain and cool stock. May be used immediately or stored, covered in refrigerator for several days or frozen for future use.
