spelt-amazake bread
Makes 2 loaves.
ingredients:
6 cups spelt flour
3 cups amazake at room temp.
1/2 teaspoon sea salt
1 1/4 cup water
2-3 tablespoons light sesame oil
1 cup of extra flour
method:
1. Combine flour and salt, add oil and mix by rubbing between palms.
2. Add amazake and mix well, then add water to form dough.
3. Knead 300-350 times, adding flour as dough becomes sticky. Be sure dough is not sticky when you finish kneading.
4. Divide dough in half, shape into loaves and press into well oiled bread pans.
5. Make a 1 deep slit down center of each loaf.
6. Cover pans with a damp towel, and put in a warm place for 8-12 hours.
7. Preheat oven to 300° F.
8. Slit loaves again.
9. Bake at 300° F for 20 minutes, then increase temperature to 350° F and bake for 1 1/4 hours.
10. When done, bread should be golden brown and sound hollow when tapped at bottom.
11. Allow bread to cool in pans 10-15 minutes. Carefully remove. Allow to cool before slicing.
