West African groundnut stew
ingredients:
2 sweet potatoes or yams, peeled and cubed
2-3 tbsp. oil
4 cloves garlic, minced
4 cups chopped onion
4 cups peeled and cubed eggplant
1 cup chopped zucchini or yellow summer squash
2 tomatoes, chopped
2 green peppers, or one red and one green pepper, chopped
2 tbsp. ground coriander
1/4 tsp. cayenne
3 tbsp. grated fresh ginger
1/4 to 1/2 cup vegetable stock or water
2 cups tomato juice
1/2 cup peanut or other nut butter
method:
1. Steam or boil the sweet potato or yam until just tender.
2. Meanwhile, saute the garlic and spices in oil for one minute. Add the onions and cook until they begin to soften. Add the tomatoes, eggplant, and a small amount of stock or water and simmer for 10 minutes. Add the zucchini and peppers and continue to simmer until all the vegetables are tender, about 20 minutes.
3. Drain the potatoes/yam and add to the stew along with the tomato juice and nut butter. Stir well. Simmer on low heat for 5-10 minutes, stirring occasionally.
4. May serve on rice, Couscous, or millet. Garnish with hardboiled eggs, pineapple or banana slices.
