almond pate
ingredients:
1 cup raw almonds, ground fairly fine
1/2 cup bread crumbs
1 cup onion, minced
1 tbsp. butter or olive oil
2 cloves garlic, minced
1 tsp. tamari
1/2 tsp. savory
1/2 tsp. freshly ground cumin
2 tbsp. minced parsley
salt and freshly ground black pepper
2-4 tbsp. sour cream or mayonnaise
lemon slices
method:
1. Saute onions, cumin, savory in butter or oil until soft.
2. Scrape the onion mixture into a bowl. Using your fingers, work in the almonds, bread crumbs, parsley, tamari and garlic. Taste and season with salt and pepper.
3. Gradually mix in the sour cream or mayonnaise until the mixture holds together.
4. Shape it into a log or press into a a serving dish and garnish with lemon slices.
