tofu marinade

• ingredients:
2 lb. tofu
1/2 oz. dried mushrooms
1 cup water
2 tsp. dried oregano
2 cloves garlic, pressed
1/2 cup virgin olive oil
1/2 cup red wine vinegar
1/2 cup red wine
1/2 cup tamari
pinch ground cloves
freshly ground black pepper

• method:
1. Drain and press the tofu to remove excess water. Cut each block into 4 slabs.
2. Simmer the mushrooms in the water for 15 minutes.
3. Toast the oregano in a small frying pan over medium heat until it becomes aromatic. Avoid burning.
4. Combine the remaining ingredients, adding the oregano when it is ready. Combine with the mushrooms. Bring to a boil and simmer for a few minutes longer.
5. Pour the hot marinade over the tofu slabs. Marinate at least 2 hours, preferably overnight refrigerated. The tofu can marinate several days as well
6. The tofu can now be baked, broiled, grilled, or stir fried.
