lemon miso soup

• ingredients:
1/4 lb. fresh mushrooms
3 scallions, chopped
1 cup water
2 sheets nori seaweed
2 tbsp. white or brown rice miso
1/4 shredded daikon radish
1/2 cup fresh spinach, washed and torn
1/2 cup water
2 tbsp. lemon juice
1 1/2 cups water
5 thin lemon slices

• method:
1. Wash mushrooms, trim stem ends and cut into thin slices.
2. Put mushrooms in a 2 quart pot with 1 cup water and bring to a boil, reduce heat, cover and simmer. Add shredded daikon. Roast nori over medium heat in oven, crumble in to broth and simmer 1 minute. In a small bowl dissolve the miso with 1/2 cup water and stir into soup. Allow soup to barely reach boiling and remove from heat. Stir in spinach, lemon juice and remaining water. Serve with sprinkling of scallions and floating lemon slice.
